
The Grayson County Extension office will be giving local residents “A Taste of the Farmer’s Market” this month.
Extension Agent for Family and Consumer Sciences Natalie Taul will be teaching three free classes during the month of June that will offer attendees new and creative to add fruits and vegetables to their diets.
The classes take place from 12:00-12:45 p.m. in the Extension Office, and each class will spotlight a different fruit or vegetable and a unique dish featuring that week’s fruit or vegetable, according to Taul.
“My goal is the make the community aware of the fruits and vegetables that are available to them,” Taul said.
All fruits and vegetables that will be spotlighted in Taul’s classes will also be available for community members to purchase from either the local Farmer’s Market or one of the local grocery stores, she said.
The project originated from the Extension Office’s partnership with the University of Kentucky (UK).
UK Dietetics and Human Nutrition students recently set about taking classic but unhealthy recipes and changing three things about them to be healthier while still retaining the foods’ flavor quality, Taul said.
All of the recipes are a part of the “Plate it up! Kentucky Proud” project, and each went through rigorous taste testing to find just the right balance between taste and nutrition, Taul said. And all the recipes Taul will be presenting during her classes derive from the “Plate it up!” project.
The first class took place on Friday, June 7 with Kentucky lettuce as the featured vegetable and Spring Harvest Salad as the featured dish.
Taul’s remaining two classes will spotlight Kentucky blackberries via a recipe for Blackberry Peach Crumble on Friday, June 14 and Kentucky eggplants via a recipe for Easy Cheesy Eggplant on Friday, June 21.
Taul said she hopes to offer more classes spotlighting different fruits and vegetables in the future.
“If everything goes smoothly, I plan on doing this a couple times a year,” she said.
Taul said, as of last week, all classes had at least ten people in them, and class size is limited to fifteen. Those taking part in the classes will not be required to attend all three classes but may do so if they wish.
